The kit consists of:
- a three-stage manual knife sharpener. It fits the hand comfortably and has non-slip rubber feet for solid control. The slots are graded from coarse to fine, to establish an edge and then refine it.
- a wooden paddle strop, hand-made of light-coloured hardwood and smooth red-brown leather. Its dimensions are: 15 in x 1 ½ in x ¼ in (380mm x 40mm x 6mm) It is long and slim to mimic the shape of the sharpening steel which it replaces. It is long enough to use on large chef knives and despite its thin profile it will not flex. The hardwood keeps it rigid. And you don’t need to strop at an exact angle; the strop is very forgiving.
- a 1 oz. bar of green micro-fine honing compound. It contains abrasive particles of chromium and aluminium oxides of 1 micron or less. It equates to an 8000 grit stone but is easy and quick to use. It is made in the United States. The PDF document you will receive shows you exactly how to apply the compound to the leather for maximum results. The instructional video demonstrates the same. The 1 oz. bar will last you for years of sharpening.
The three-stage hand held sharpener is easy to use and needs no set up time. With just a little practice you will be able to turn a dull knife into a very sharp kitchen implement that is a pleasure to use.
The leather strop is the traditional tool for refining the edge of a blade that has been sharpened on a series of whetstones. It removes any fine burs left by the stone and straightens the edge. By adding modern honing compound to the strop we improve its effectiveness greatly.
